A slicer is an essential tool for cutting meat, cold cuts, vegetables, fish, and even cheese. While some slicers, such as those for home use, are rarely used, those used in butcher shops, delis, restaurants, or canteens always work. Therefore, thorough maintenance is essential to keep it in working order for a long time. A clean and efficient slicer significantly affects food hygiene.

Cleaning and disinfecting the slicer extends its life, ensuring precision cutting while preserving the properties of the food. Therefore, maintenance after use is essential to keep the machine efficient without contaminating food.

Removable elements

All cleaning operations must be carried out when the machine is switched off. Therefore, even if it may sound obvious, remember to disconnect the machine from the power supply before starting maintenance. We recommend setting the slice thickness to zero before switching off the slicer. This way, you can perform all other operations smoothly and safely, because the thickness indicator will protect the blade.

The slicer components should be washed daily or several times a day in case of intensive use.

After switching off the machine, we recommend removing all removable parts. Slicers with removable parts make it easier to clean and wash the machine.

Depending on the version, this coating can be applied to the entire machine. In this way, cutting products that tend to create more friction, such as cheese, has never been easier.

Edge

The blade is the most frequently used part of the slicer, so it should be thoroughly cleaned after use. Regularly clean the blade with a special degreaser, a suitable disinfectant or hot soapy water. You can also remove it with a blade puller for a more thorough cleaning. However, a well-designed machine always has enough space to allow the blade to be thoroughly cleaned without having to remove it every time.

The machine structure can be cleaned less often than other parts. However, it is good practice to remove residue with a sponge. Rinse and dry the structure every time you clean it.

Sirman slicers are manufactured using a gravity casting process with anodized alloy in a shell mold to obtain food-grade surfaces. This process prevents the structure from wearing out over time. The result is a clean, durable and uniform hard surface. Although this process has many advantages, it requires a lot of energy and resources during production, involves several steps and therefore a long lead time.

For example, the casting stage is carried out by gravity and not under pressure, because we use the highest quality alloys to undergo the electrolytic process, which is necessary for food-grade machines. Furthermore, the structure emerging from the mold has a rough surface that must be polished using methods adapted to the rounded shapes of the machine.

Sharpening the blade

After cleaning the machine, you can sharpen the blade. Sharpening the slicer blade helps maintain its quality, ensuring precise cutting and reducing product waste. When you notice a decline in the quality of the cut and more product being wasted, it is time to sharpen the slicer.

Sirman has equipped the slicer with a sharpener for a number of reasons. First, keeping the tool in sight will encourage the operator to sharpen the blade periodically. Butchers always sharpen their knives just before cutting. So why not do the same with the slicer blade to ensure the highest quality of service?

Having the sharpener in sight prevents improper actions, such as using incompatible tools. Another reason Sirman decided to go with this solution is that each slicer is obtained from a mold, which is then honed and polished. While this process makes each machine unique, it can also affect the positioning of the sharpener, causing damage. The sharpener is adjustable depending on the specific slicer, and having it on the machine is convenient and functional.

In addition, Sirman installed top and bottom protective covers to ensure it remains clean and undamaged.
